If you prepare, store or sell food on your premises, you must have a procedure based on HACCP principles in place. This follows from Article 5 of Regulation (EC) No 852/2004 on the hygiene of foodstuffs and from Act No. 152/1995 Coll. on foodstuffs. During an inspection by the regional veterinary and food administration or the regional public health authority, the documentation is usually one of the first things the inspector asks for.
We prepare the documentation around what you actually do on the premises. It is not a downloaded template with a renamed header. We walk through the premises, describe the flow of food from goods receipt to service, and define the critical control points, their limits and how they are monitored.

HACCP training and food hygiene
Alongside the documentation we train employees in the HACCP system and in food hygiene. Professional competence for epidemiologically significant activities is required under Act No. 355/2007 Coll. on the protection, promotion and development of public health. We deliver the training at your premises or through e-learning, so that you do not lose a shift.
